I always let my cheesecake come to room temperature before chilling. For bests results, let it cool as gradually as possible. I put mine on top of my oven (the warmest spot in my house) so it can gradually cool off as the oven does.

The best damned is right. The method also yields a good texture where other recipes ended up gluey. I try and not use oils so I use a tbsp or two of olive oil instead of vegan butter (oil is oil). It still works with less quantity and was delish. Roasted garlic come on! How could it not. And I even heat them up a day or two later with a sprinkle of water and love them. Score MB!

These are the best damn vegan mashed potatoes! I am infamous for botching potato dishes but I did just fine with this recipe. I think they tasted better the 2nd and 3rd day vs. the evening I made them. The only thing I might change is a bit less garlic. I topped with store bought vegan mushroom gravy but they were equally good without.

While the actual formula for my best sourdough recipe is simply a mix of flour, water, salt, and levain, there are many nuances here to pay close attention to; here are a few key things to successfully making this bread:

If you're a fan of the slap & fold mixing technique I've described in the past, you can do this but be aware that it is difficult at this hydration. It's best to first slap and fold the dough without adding all the reserved water to get the dough smooth and strong. Then, return the dough to the mixing bowl and slowly add the remaining water while folding the dough.

Above, you can see my best sourdough recipe dough halfway through bulk, after about 2 hours. There is no significant rise as of yet, but the edges are beginning to dome downward, and the dough's texture is smoothing out slightly. We still have several more folds to do and more strength to build.

Once your loaf is done, remove and let cool on a wire rack for 1-2 hours. See my post on the best way to store the bread after it's baked for a few tips on keeping it on the counter and freezing if you think you won't get through both loaves in a week.

Yes! You can add 3/4 cup chopped walnuts or pecans. You can add them either in addition to the chocolate chips or in place of the chocolate chips. Just note if you remove the chocolate chips your crust on top may not be as shiny. For best flavor, try toasting the nuts on a lined tray in a 350F oven for about 6 to 8 minutes, stirring once.

Made this today! It is delicious and chewy just as promised. I doubled and baked in 139 no problem. I also added pecans but only put 3/4cup of the chocolate chips. It is absolutely the best from scratch brownie recipe ever! Printed and saved!!

Hi Pam! We find that vegetable oil works best, but other readers have reported success with other types of flavorless oil. Avoid coconut and olive oils. Let us know what you think of these brownies once you give them a try!

Amazing! best brownie reciepe. I followed the instructions and it yielded a beautiful, shiny brownie that we could not wait to cool. One question: would doubling the recipe work if i was making it for a larger group? or could I make brownie bites using a mini muffin dark metal pan?

No, unfortunately, the two are not interchangeable. Vegetable oil is your best bet here, but other flavorless oils (that remain liquid at room temp) should all work well too. Otherwise, give these Coconut Oil Brownies a try instead!

Hi Izzy! So glad to hear that you enjoyed these brownies! I would recommend giving them a try with vegetable oil, for the best taste and texture, but the batter will still be fairly thick, to yield a perfectly chewy brownie ? Happy baking!
